Texture modified diet (TMD) level 5 menu

Texture Modified Diets (TMD) also referred to as the International Dysphagia Diet Standardisation Initiative (IDDSI) – these meals are available when specifically prescribed by our speech and language therapy teams. Food is prepared in a special way to create a certain texture or consistency, making it safer to eat for people with swallowing difficulties. 

Minced and moist diet, or IDDSI level 5. Food should be able to be easily minced or mashed with a fork. It may be presented as a thick puree with obvious lumps in it. Food should be moist and should easily form into a ball in the mouth.

Breakfast

Breakfast is served from the ward, please speak to ward staff about your breakfast choices.

Lunch

Starters

  • Orange juice
  • Soup of the day (please ask a member of staff for details)

 

Main Choices

  • Roast beef, cauliflower cheese, mustard mashed potato 
  • Roast chicken, stuffing, swede, mashed potato 
  • Fish, cheese sauce, mushy peas, mashed potato 
  • Macaroni cheese, lentils or carrots, mashed potato  (V)
  • Lentil bolognese, carrot or swede, mashed potato  (V)

 

Desserts

  • Pureed lemon sponge and custard 
  • Pureed syrup sponge and custard 
  • Yoghurt 
  • Pureed fruit pot 
  • Chocolate custard pot 
  • Mashed banana 
  • Pureed fruit pot and yoghurt 

 

Supper

  • Tuna bake, mushy peas, mashed potato 
  • Chicken casserole, carrots, mashed potato 
  • Roast lamb, mint, swede, mashed potato 
  • Vegetable tikka masala, lentil daal, ground rice 
  • Vegetable lasagne, carrots, mashed potato

  • Pureed rice pudding 
  • Pureed chocolate sponge and custard 
  • Yoghurt 
  • Pureed fruit pot
